Jamaican Festival Recipe




This Jamaican Festival recipe produces a delicious, slightly sweet, fried bread which is somewhat similar to a Johnny Cake. But whereas a Johnny Cake is made with just flour, Festival is made with a mixture of flour and cormeal.
It is quick and easy to make and it goes particularly well with most spicy foods.
So if you are having Fry Fish, Ackee and Salt Fish, Mackerel Run DownEscovitch Fish, or Jerk of any kind be sure to make some Festival to go with it.

The proportion of cornmeal to flour varies considerably from recipe to recipe. Some recipes have half as much cornmeal as flour, but I prefer it with equal parts of each. You can experiment and find your own preference.

Some of the best Festival in Jamaica is found at the food stalls on Hellshire beach, and it is a must with their Fried Fish.

Ingredients

  • 1 cup cornmeal
  • 1 cup plain flour
  • 2 tbspn sugar
  • 1/2 teaspn salt
  • 1 slightly rounded teaspoon baking powder

How to Make Festival

  • Mix all ingredients together in a mixing bowl
  • Add just enough water to make a dough.
  • Divide and shape into egg sized portions.
  • Flatten slightly.
  • Either deep fat fry till golden brown.
  • Or fry in frying pan till golden brown on both sides.
